Ingredients
- 3″ piece of fresh ginger
- 1-1/2lbs boneless chicken breasts-cut into 11/2″ cubes
- 2Tbs. canola oil
- 1 large onion thinly sliced
- 2 garlic cloves -minced
- 1/4c soy sauce
- 2Tbs. white vinegar
- 2Tbs. sugar
- 1/2c scallions-sliced
Procedure
- Peel ginger and cut into 1/8″-thick matchsticks to measure 1/2 cup.
- Soak in cold water 10 mins.
- Drain heat oil in a skillet over high heat, brown in 2 batches,6-8 mins.
- Set aside.
- In the same skillet over medium heat, cook ginger, onion and garlic, stirring until browned,8-10 mins.
- Add soy sauce, white vinegar and sugar, cook over high heat until thick,3-4 mins.
- Add chicken, stir to warm.
- Remove from heat.
