  8. Cover chicken + salt (add water if needed) and cook for around 15 minutes until 3/4 cooked.
  9. Add can of tomato paste and cook on low heat.

  3. Put it in a deep, heavy pan and add to it one peeled onion with 1 tspn of salt, cardamom pod, clove, nutmeg and cinnamon sticks.
  4. Add 1 ½ litre of water, cover and cook over medium heat for 30 minutes.
  5. Reserve stock.
  6. Fry finely chopped onions in butter, keep stirring till soft and golden.
  7. Add minced meat, allspice, cinnamon, and salt to chopped onions and fry for 10 minutes over medium heat.
  8. Wash rice and drain, then add to meat and onion.
  9. Stir occasionally over low heat for 3 minutes.
  10. Add 4 cups of boiling chicken stock to the rice, add mushrooms and cover.
  11. Cook rice over high heat for 5 minutes.
  12. Lower heat to low and cook for 20 minutes.
  13. Pile rice onto a large platter with chicken pieces in the centre and spread over nuts.
  14. Serve hot with cucumber mixed with yoghurt and salad.
